Introduction

Updating my friends' and colleagues' e-mails

On the occasion of the 175th anniversary of 7 Portes Restaurant, I coordinated the preparation of a list of friends who we thought might be happy to share the celebration with us. Lately I’ve had other reasons to make addresses lists and have found loads of business cards and e-mails of people I have met. You remember the ones you said goodbye with regret, the ones you would be eager to meet once again, the ones with whom you guess that, with some more time, you would be able to build a strong friendship.



On the other hand, there are times in life, when the combination of age and experience, and also some vanity, makes us think that we have things to explain. This excitement added to the feeling that we should establish closer links with real and potential friends, has made me decide to undertake the creation of a Newsletter.

Once the purpose is clear and the format settled, it was necessary to consider the contents. These should have to do with what has my life been. As a summary, I would say that I have dedicated my life professionally to science and "paellas". On the scientific side, I have worked in two fields, applied economics and sciences of management. On the restoration side, in addition to the family business, I have always had a strong interest in the history of cooking and recipe books. In the field of gastronomy I try to keep up with culinary trends through my reflections, by following blogs and specialized magazines, and always accompanied by a recurring professional practice.
